Never tasted a bunch of pinots, but at did go to a trade tasting with lots of italian wines, and I learned that when your tongue is dead from tannins, pellegrino is the most amazing cure known to man! Perrier didn't help that much, but the bubble size in pellegrino seemed perfect.

Spitting is a must. The ability to spit quickly, cleanly, and economically is an oft-overlooked skill. Not only is it practical and crucial for large tastings, it can often show the pourer at tasting rooms that you're serious, and open the doors to deeper wine conversation.

You should write an article on spitting technique! My main advice is: practice in the shower.
